Gazar koshimbir / Maharashtrian carrot slaw (a recipe)

My mom grew up in Mumbai, and learned most of her cooking from her mom (my grandmother). This is a family recipe for carrot slaw (or as it’s called in Marathi, gazar koshimbir).

Carrot Slaw

You will need:

  • 4 carrots, shredded
  • 2 green chillies, chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1/4 tsp asafoetida (non-essential)
  • 3 tbsp canola oil (olive oil burns too easily so is unsuitable for this dish)
  • salt, to taste
  • coriander/cilantro to garnish
  • juice of 1/2 lime

Grate the carrots. Set aside. Chop the chillies. Set aside.

Heat oil on the stove. Add mustard seeds, turmeric, asafoetida and chillies to the oil.

Cook on high heat for 2 minutes. Take off heat and set aside to cool slightly.

Pour oil vinaigrette over shredded carrots. Garnish with coriander, salt and lime to taste. Mix and serve.
