Fritter comes from the French word “frirer” which means “to fry.” Except these delicious zucchini fritters are healthy alternatives to the traditional fried foods we try so hard to stay away from. Here are easy-to-make and healthy-to-eat zucchini fritters, adapted from Damn Delicious.
You will need:
- 3 zucchinis, grated
- 1/2 cup all purpose flour
- 1 egg, beaten (health conscious alternative: 1-2 egg whites)
- 1 tbsp minced garlic or garlic paste
- salt and pepper, to taste
You will get:
- 8-10 3’x3′ fritters
Grate your zucchini and place in a colander to drain. Additionally, spin it in a salad spinner to make it as dry as possible.
In a bowl, mix the zucchini, flour, egg whites and garlic. Add salt and pepper to taste. I also added red pepper to make the fritter mixture spicy.
Scoop fritter mixture (I used an ice cream scoop to get a standard measurement across all the fritters) into a pan lined with olive oil. Let cook for 5 – 6 minutes or until golden brown and crispy on one side. Flip and cook again for 3 – 4 minutes until crispy on that side.
